How to Make Makhana Kheer: A Step-by-Step Recipe

Ingredients:

  • Makhana: 2.5 cups

  • Ghee: 2 tablespoons

  • Full-fat Milk: 1 liter

  • Sugar: ¼ cup

  • Cashew Nuts (slivered): ¼ cup

  • Almonds (slivered): ¼ cup

  • Cardamom Powder: ½ teaspoon


For Garnishing:

  • 1 teaspoon pistachio slivers

  • 10-12 saffron strands


Makhana Kheer Recipe: Step-by-Step Instructions


  1. Roast the Nuts and Makhana: Heat ghee in a pan over low flame. Add the cashews, almonds, and makhana, and roast until they turn golden. Set them aside.

  2. Boil the Milk: In a deep-bottomed pan, bring the milk to a boil.

  3. Prepare the Powder: Reserve ¼ of the roasted almonds, cashews, and makhana. Place the remaining roasted ingredients in a blender and grind them into a fine powder.

  4. Mix Ingredients: Add cardamom powder, saffron, sugar, and the makhana powder to the boiling milk. Stir for one minute to combine.

  5. Combine and Cook: Add the remaining reserved makhana and dry fruit mixture to the pan. Stir occasionally for about 10 minutes, or until the makhana becomes soft.

  6. Simmer: Allow the kheer to simmer for a few more minutes.

  7. Garnish and Serve: Garnish with pistachio slivers and saffron. Serve the kheer warm.

  • You can keep roasted makhana ready and keep in an air tight container.

  • Keep stirring the kheer while cooking.
